Coq au Vin: Day 2

Welcome back.
Pull the goodness out of the fridge and place into a 300 degree oven. Let it go for about 2.5 to 3 hours, or until it looks something like this:

Remove the chicken and put it in another pan that will keep warm for at least an hour.
Strain the sauce into another pan, I used a colander, and discard the veggies (we have cooked all the flavor out of them, trust me).

Put the sauce back on the stove over med-low heat and reduce it at a simmer for at least half an hour. Let it get down to a nice thick sauce.

After it’s reduced, add back the onions and bacon from yesterday (you saved those, right?).
Let that heat up, and get some noodles cooking.

Plate and enjoy.
